• 5 lbs. Basic Muffin Mix
  • 1/4 cup Grated Lemon Peel
  • 2 tsps. Nutmeg
  • 1 qt. Packed Shredded Zucchini (not drained)


  • In mixing bowl, combine all dry ingredients and blend together. Add 3 1/2 cups water to mix and blend until all dry mix is fully incorporated.
  • Add nuts, raisins and zucchini, mix until just blended. Using greased muffin tins, fill 2/3 full and bake at 425°F for 15 – 20 minutes or pour into loaf pans (approximately 2/3 full) and bake at 375°F for 30 – 35 minutes.
